We have many varieties of apples on our farm, some to pick and some in baskets from other area farms: Cortland, Golden Delicious, Red Delicious, Empire, Fuji, Galas and  Macintosh among them. Here are brief descriptions.

If you can pick the apple variety at Keepsake Farm Market, the description is in green with the approximate picking time:

Cortland
Tangy taste. Fine-grained juicy flesh stays white longer. For snacking, salads, baking.
September.
Empire
These apples offer a blend of sweet/tart taste to accompany a crisp and juicy texture. They are best used for fresh eating or salads and are wonderful for baking.
Late September.
Fuji
Sweet and juicy apples, the Fuji are excellent for eating and salads. If you  make applesauce, you’ll need little or no sugar.
Gala 
These are a crossbreed of apples that feature a sweet and juicy taste with a crisp snappy texture. A superb apple for dessert and fresh eating.
Golden Delicious
Crisp white texture with a sweet, juicy taste. Great for salads, baking or snacking.
Early October.
Idared
These apples sometimes have flesh tinted a rosy pink color, and that makes for a beautiful applesauce. They are juicy and sweetly tart. By the way, if you want the best color for applesauce, cook them with the skins on and then strain the sauce. You can also use Idareds for eating, salads, sauces and baking.

Jonamac

Is a sweet/tart apple, great for eating and applesauce.

Macoun

Very sweet and juicy with white flesh, this applies great for eating and for salads. It is especially good served with cheese.
September.
McIntosh
The all-time favorite for eating and salads.
September.
Mutsu
Of Japanese origin, these apples are sweet and honey tasting with crisp, juicy flesh, similar to Golden Delicious. It is especially good in salads and has a sweet, light flavor when cooked.
Paula Red
Tart and juicy with a crisp white flesh, these apples are tops for eating. Applesauce made with Paula Red apples needs almost no sugar.
Red Delicious
A juicy, sweet taste, and a classic for fresh eating and salads.
October.
Rome
Named for an apple-growing area in Ohio, not Italy.  Slightly tart.  Best for baking or mix with a sweet apple, like Golden Delicious, for a super applesauce.
October.
Spartan
This large apple smells wonderful, stores well and is crisp.
September.

Stayman
Is an all-around useful apple, sweet and good for eating, salads, applesauce, general baking and pies.

Tydeman
are sweet and great to eat.
